Vege curry with

2 green peppers
1 Natural Sweeties sweet onion
1 Natural Sweeties echalion shallot
2 tomatoes
1 courgette
1 natural yoghurt
2 cloves of garlic
1 piece of fresh ginger
500 ml of vegetable stock
1 tablespoon of curry
40 g of cashew nuts
Olive oil
Pepper
Salt

  1. Peel and dice the tomatoes and sweet onion, and sauté them in a pan with olive oil.
  2. Season with salt and pepper, add the curry, yoghurt and vegetable stock.
  3. Blend, strain and set aside.
  4. Cut up the other ingredients and sauté them to your taste.
  5. Add the sauce and grate over the fresh ginger and cashew nuts.
